SAMPLE PAELLA MENU*
Two paellas will be featured each week.
These are just a few of the possibilities . . .

Paella a la Valenciana
The most famous of all paellas was created in the fields of Valencia by day laborers. Made with chicken, chorizo, shrimp, clams, artichokes, peppers, and peas, as well as rice infused with saffron and Spanish smoked paprika.

Spinach, Chickpea, and Pinenut Paella
This simple vegetable paella makes a hearty, satisfying meal and is complimented by a hint of cumin added to the saffron broth.

Sweet and Sour Chicken Paella
Paella rice is combined with honey coated walnuts and bitter orange then simmered with albariño wine, saffron, garlic, tomato, sugar snap peas, and chicken. The light flavor of citrus in this paella makes it a perfect vehicle for the tender chicken.

Paella Negra
This is one of the classic paella greats, made with fresh shrimp, clams, mussels, and calamari. The rice is slow cooked with onions, garlic, and saffron then colored, and flavored, with squid ink, adding richness and dimension to the seafood and vegetables. Topped with a bright yellow aji amarillo aioli, this paella is stunning.

Duck and Wild Mushroom Paella
A traditional dish of Sevilla, this paella features slow cooked duck, wild mushrooms, and smoked paprika finished with saffron and aged sherry; served with toasted almond and sherry aioli.
